3 Burrito Express Burrito Express officially celebrated its
least 150 people on its waitlist before opening, nearly one-third of its total capacity, which he called the largest the company had ever seen. The site offers covered RV storage along with amenities including an RV wash, dump station, ice bags, wholesale propane and a dog park. Raber said this is the company’s eighth project across Arizona and Texas with a goal to become “the best RV storage company in America.” 5 Mattress Firm Mattress Firm is moving forward along the main commercial strip after permits were issued for demolition and tenant improvements at 44765 W. Hathaway Ave., a former SunLife women’s health center. The demolition permit is valued at $20,000, with D. G. Fenn Construction the contractor. A separate tenant improvement permit is valued at $121,563. The mattress retailer is among the commercial projects approved in Maricopa between Feb. 11 and March 10.

Maricopa grand opening inside the Circle K at Porter and Honeycutt Roads after first slinging burritos in January. The Tempe-based chain gave away 200 free burritos before noon March 27, along with raffle entries for a $500 gas gift card, plus free swag, drinks, snacks and samples. Owner Angel Marin said the concept is meant to challenge perceptions of gas station food, emphasizing fresh ingredients prepared daily. The Fast and Fresh model serves breakfast and lunch burritos until 3 p.m. at its city locations, now including the Circle K at John Wayne Parkway and Smith-Enke Road, which opened in April. The Circle K at John Wayne Parkway and Bowlin Road will be next, Marin said. 4 Carefree Covered RV Storage Carefree Covered RV Storage celebrated with a ribbon cutting in April after opening more than four months earlier to strong demand. Pinal County Environmental Health inspectors cited the restaurant for one priority violation after finding the walk-in refrigerator was too warm. The manager provided logs showing the unit was 38 degrees at closing the night before, but some food was measured at 50 degrees. An embargo notice was issued for items stored overnight and the unit was recalibrated to 41 degrees before the inspection ended. 2 Buffalo Wild Wings B-Dubs moved another step closer to opening at Maricopa Power Center as the Atlanta- based sports bar chain now holds permits for a 9,893-square-foot at-risk foundation and on-site improvements.

6 Roots Eatery Roots received a $191,288 tenant improvement permit for its space at The Shops at Maricopa Village as work moves forward on expansion plans first reported in December. Those plans call for the restaurant to take over the neighboring suite, nearly doubling its footprint with a larger dining room, new kitchen and bar area as the formerly lunch- only eatery rebrands as Roots Trattoria. 7 South Bridge Marketplace Construction continues at the next large shopping development along John Wayne
Parkway and Honeycutt Avenue. The city issued permits for a new 6,540-square-foot building, a 9,974-square-foot shell building and on-site improvements for Phase 2 of the project. Three other buildings at the site are already more than halfway complete. The final phase is set to bring Aldi, Five Guys Burgers & Fries, a drive-thru Panera Bread, Tropical Smoothie Café, Einstein Bros. Bagels, Club Pilates, European Wax Center and She Nails Lounge. Chick-fil-A is rumored to be planned for one of the buildings. 8 U-Haul The Phoenix-based international moving
company now has permits in hand to build a 25,290-square-foot building near Honeycutt and Jericho Roads. The permits, issued to Amerco Real Estate of Phoenix and valued at $2,876,990, cover part of an approved 10-acre U-Haul project that will include storage, rental and retail uses, along with regional office space for employees.
