Because proper cooling could not be verified, both pans were embargoed and removed from service.

For a moment, everything slowed down. It was comforting, but it also carried a sense of finality. I knew things were about to change. I heard the name before mine called and knew I was next. I took the diploma case, shook hands, paused for the photos and walked off the stage knowing I would never again be just a high school student. Surprisingly, that thought brought me peace. I heard my family cheering and felt their support through every shout. My best friend, Jayda, delivered the tassel-turning speech, guiding us into the next chapter of our lives. It was comforting. It was also a little sad. The great separation was getting closer. My tassel got stuck, but none of that mattered once I got to run over and hug my friends. We did it. The moment we had talked about for years had finally arrived and passed in what felt like seconds. For so long, graduation felt impossibly far away. Then it happened. And somehow, that ending became the beginning.

OR A LONG TIME, GRADUATION FELT IMPOSSIBLY FAR away. But when I finally looked down at my diploma case, I realized it wasn’t the finish line. It was the beginning.

Putting on my cap and gown that day was the first real moment of realization. Not trying it on weeks earlier to see how it looked. This time it was real. Driving to school for what would be the last time. Walking into the auditorium and seeing the familiar faces I had spent the last four years with. We wore the same colors. Shared the same nerves. Feared tripping on stage. Walking onto the field, I heard the cheers, the music and the excite- ment all around me, but I was only looking for my familiar faces. My constants. My family. As students ahead of me walked across the stage, I watched them re- ceive their diplomas and listened as their families cheered. Row by row, the line grew shorter. Soon it would be my turn. For years, I had said, “I can’t wait until I’m 18,” or “I can’t wait to graduate.” I wanted the freedom that came with adulthood. But when that freedom finally arrived, I found myself wishing time would slow down just a little. As I prepared to walk on stage, my teacher, Mr. Braden, stood at the ramp and gave me a hug.

What do the ratings mean?

EXCELLENT: All priority standards are observed as compliant. SATISFACTORY: One or more priority standards are out of compliance. All priority standards are corrected at the time of inspection. NEEDS IMPROVEMENT: One or more priority standards is out of compliance. At least one violation is not corrected at the time of inspection. When violations are corrected to the satisfaction of the department during a follow-up inspection, a satisfactory rating will be given. UNACCEPTABLE: One or more violations observed are an “imminent health hazard.” Hazards include the misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak and unsanitary conditions that may endanger public health. Hazards can stem from fires, floods, electrical or water problems, and sewage backup. When violations are corrected to the satisfaction of the department during a follow-up inspection, a satisfactory rating will be given.
